- 2 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup unsalted butter softened
- 1 1/4 cups granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 tablespoon lemon zest from about 2 lemons
- 2 tablespoons fresh lemon juice from the same lemons
- 1 cup fresh or frozen blueberries
Instructions
- Get the Oven Ready: Turn on your oven to 350°F (175°C) and put a paper on a baking tray.
- Dry Stuff: In a bowl, mix the flour, baking powder, baking soda, and salt. Keep this dry mix for later.
- Butter and Sugar: In another big bowl, beat the soft butter and white sugar until they are fluffy and light.
- Wet Stuff: Add the egg, vanilla, lemon skin, and lemon juice. Mix well.
- Mix Wet and Dry Stuff: Slowly put the dry mix into the wet mix, and stir until you have a soft dough.
